RED VELVET CAKE


I found an easy  Red Velvet recipe.  Just a matter of mixing the wet into the dry ingredients. But the result is a soft, moist and delicious cake. I have not been baking more often. This is partly due to my laziness or shall I say due "my busy schedule with other things" :D!  I can see that  my cake decorating skills have gone rusty and all the practice and teaching have been given back to the teachers!
Baked this Red Velvet Cake the previous weekend - simply decorated with some of the cake crumbs.  Love the creamy cheese frosting!

I baked another cake last weekend  and this time change the decoration with fresh strawberries.
Red Velvet and cream cheese frosting always goes perfectly  hand in hand.


The first time I baked the cake the 2nd time, I was not satisfied with it. The cake was flat and dense and I just could not delivered this cake even though I was charging it cheap!

So I baked another cake which turned out as good as the first one. Really baking is a science and I am always amaze and sometimes frustrated  with the results at times!

Now what I am to do with the "failed" cake.  To throw it away was simply a waste of time  and effort and definitely a BIG NO as it was not altogether inedible and besides think of the hungry!

Then I decided to use it for a dessert to bring for the dinner that night to my brother's house.

Cut the cake into tiny square to fit the shooter cup. Next time, I shall remember to buy the square cup instead of this tapering one. So difficult to get the correct sizes as it widen upwards! 

Lay the bottom with a piece of the cake, top with the cream cheese frosting.  You can decide how many layers go in. I had half each piece of the cake for these. 

Recommended to use 2 layers cake (no need to cut half, maybe) and frosting should be enough for a dessert otherwise it will be a bit heavy on the stomach after a meal.

Simply crumbled some of the cake on top and add some lemon zest as well.

I did these again for my office Hari Raya party.
  
Frankly it was a bit tricky to get clean corners as well as even layer of the frosting.  Probably it  would be much easier to use a round shooter glass instead.   Well as the saying goes, practise make perfect. It is not perfect yet and I will have to keep on practising. 

So enjoy making these for the weekend.

    Yes, it is easy to handle but do keep it up to 2 layers- many cannot finish the whole cup!
