HOKKAIDO CUPCAKES

It is on everyone's lips. 
Everybody seems to be baking this.
They are taking over  the bakeries in town.
So how can I not joined the crowd- kiasu- lah

I am talking about these little fluffy "chiffon"  cupcakes with the cream in the centre that everyone seems to be raving about.

This is my impression after baking these Hokkaido Cupcakes. 
They resembled chiffon cake, no doubt softer and more fluffy but in fact that's what they are made up of- from the ingredients used and to the method used more or less the same too.
There are so many recipe around. So I just pluck one and had a good time bonding with my daughter Sarah over the making. Truly the time teaching Sarah to bake is more rewarding than the cupcakes!

Whilst in the oven, they huffed and puffed and rose magnificently.  After cooling, they do collapsed slightly.

Fill the cooled cupcakes with the whipped thicken cream filling.  I like the way that the top slowing puff and even out as you pipe in the filling.


 Finishing touch- Sarah dusting the icing sugar over the cupcakes.

At last, tasting time. - yummy, light, soft, fluffy, it did not disappoint!
