AU REVOIR... TILL WE MEET AGAIN

After the time together in London and Paris, it's time to say Au revoir to May as she goes back to Melbourne. It was a poignant time - saying goodbyes to the doggies which she has come to love and care across the distance and which she even so generously financially towards their well-being.

and Blackie said: "Yes, I will be a good girl from now on"...with only 3 legs left.

 She had bought so many apples knowing that the the doggies love them for desserts.


So I decided  to bake some Apples cupcake and using the butter which she brought back from Australia.
The recipe was taken from the Good Food Magazine.    

The recipe use only 2 apples.  Peeled and diced 1 apple and sliced the other thinly.  I used lemon juice on both to prevent browning for 5 minutes.  Drain dry and set aside. 
Meanwhile, cream butter (125 gm) and brown sugar (125gm, but I only use 100 gm)  together till light and pale.  Add 2 eggs,  beating well one at a time. 
Sift flour (125 gm), 1/2 tsp baking powder and 2 tsp cinnamon powder together.  Add flour mixture to the batter gradually till just combined. 

Add 1 tablesp of flour to the diced apples. 

Stir in the diced apples to the cake batter and spoon into the muffin tray

arrange 3-4 slices of apples on top of the cake batter and bake at 180C for around 20-25 minutes.  

Remove from oven and normally I will let it cool in the pan on their sides to prevent soggy bottoms before cooling on the wire tray. 


Lastly brush the cupcakes with some apricot glaze (I used 2 tablesp apricot jam mixed with 3 tablesp of hot water).  
I wonder why I did not try these before.... they are delicious and soft and not so sweet with a slight tinge of tartness from the sliced apples.
