As the weekend approaches, I would try to use whatever ingredients left in the fridge for a quick meal. So, what did I find- only a few fresh cherry tomatoes and 2 chicken thighs. We both felt that once a week chicken is more than enough so it went back into the freezer. Check out the pantry, and found a can of sardine and half a packet of spaghetti.
Guess what was for dinner?
Spaghetti with sardines.
Bring a pot of water to boil, add salt and spaghetti and cook till a'dente.
Meanwhile heat pan and add butter/olive oil. Add half onion(diced) and saute till soft. Add the cherry tomatoes - slice bigger ones in half and leave small ones whole. Toss till fragrant and tomatoes start to become soft. Add the sardines. Optional: splash of white wine.
Drain the spaghetti and toss into the pan. Mix well, adding some pasta water if too dry. Adjust seasoning and dish up and serve immediately with some grated parmesan cheese and freshly grounded black pepper.
Since I had some chicken stock left, I made some Thickened Corn Soup to serve with the spaghetti.
Easy and delicious pre-weekend dinner.
