HOKKAIDO GREEN TEA CUPCAKE

It's weekend again. With the girls busy with their schedules, I am home alone again..... not actually alone with the 4 doggies and the cats. Why I cannot number the cats? Because they are visitors who could come at the exact time for their meals except my BiBi but she also like to stray and go gallivanting at night.   The doggies being dogs they are tend to become very excited when we are home, be it welcoming us home or knowing that it is meal or walkie time.... other than that they are the perfect dogs;  sleeping around the clock except once in a while waking up to bark at the strangers walking past the house, friends/families visiting us or the postman...... well it is their job right to guard house, right?. And they do quieten down immediately when the "danger" is gone out of  their sight. 
So I really don't understand why my next door neighbour (no, not the one who "exchange"  food with me) always light up firecrackers whenever the dogs make a ruckus!!! He had only complained to me personally once about the noise which I denied his allegations that the dogs barked the WHOLE DAY.    Dog barking more than 15 minutes continuously is considered a nuisance.   I understand not everyone loves dogs but to the extent of throwing fireworks whenever the dogs become over-excited is just too much!   I was thinking it is very bad example for the father to do that in front of his children.... could be a case of animals-haters in the making! I believe children should be brought up to love animals.     Anyway,  I have tried my level best to keep them quiet but they are dogs not children whom you can scold them or beat them;  maybe I do need Caesar Milan's help to train my dogs!

So, to beat the stress, did some baking therapy over the weekend and sharing the goodies with my neighbours (others) sure bring joy and happiness.

Hokkaido Green Tea Cupcake using the green tea powder bought from Seoul.  
Now I regret not buying more bottles as it will be finishing soon.....

Ingredients for the Chiffon Cake. Recipe from Nasi Lemak Lover's Blog.
  Green tea powder is sifted together with the flour.  

Egg yolk and caster sugar whisk together then water and oil is added and combined well before adding the flour mixture. 

A third of the beaten egg white is added to the egg yolk mixture and mix well before adding the rest. 
Mix well and spoon batter into the cupcake liners and bake at 170C for 15-20 minutes. 
Cool and then fill with whipping cream.  

Matcha Marble Chiffon Cake  

The green tea powder is mixed with 1 tablespoon of warm water to a paste. Just remove 4-5 tablespoon of the cake batter and mix with the green tea paste.  Spread half cake batter into the cake tin and then spoon the green tea batter and swirl it around 

Top with the remaining cake batter and bake at 170C for around 40-45 minutes till done.

Ingredients for  Lemon Poppy Seed Brioche... trying to use up the lemons.  

very wet and sticky dough... best to use machine and to rest the dough overnight in the fridge for not more than 12 hours.... I was late and the dough had deflated....anyway just went ahead to shape them .. divide into 12 portions and then each portion into 3 small balls and place in a greased muffin tray.  Was happy to see them rising for the 2nd proof.  Bake at 170C for 20 minutes.

Surprisingly the texture was still soft and fluffy..

In between my baking, I had this for my lunch. Delicious as always, her standard maintained always.

  1. I love dogs and cats very much!! I dare not keep them as pets again. When my sister's 2 cats died, I cried rivers and buckets of tears when they were not even my pets. Muahahahaha... Your family must have got very kind hearts to welcome stray cats!
    I love Hokkaido Cup Cakes and my wife bakes good ones too but never tried green tea. I could see yours is very marvelous and would melt in my mouth!
