Life is therefore so uncertain. There were 6 of them in the group but overnight one passed on. Happily it was her first visit to Malaysia but she suffered a stroke and died on the spot in a hotel in Langkawi. My brother immediately flew over to help them with the necessary arrangements besides being their official translator. After that night, it was a few stressful days for the rest of them to get over the official requirements to send the body back to Guangzhou and then to carry on with their holidays. On Friday night, we meet up with them for a farewell dinner at the Sam You Restaurant in Petaling Jaya.
This really is a wake up call for me... in order to travel I have to be in tip toe health condition and always treasure/enjoy our holidays. Anyway this was one of life uncertainties....

But just remember a pizza dough does not need to be kneaded as in a bread dough. This is a rather sticky dough, as I might have added more water than necessary. Recipe from the King Arthur's Blog.
Put on the shower cap and let it rest till double. If you want to make pizza later, can leave it in the fridge up to 12 hours.
Ingredients for the topping: cheese, bacon and spinach.
After browning the bacon, I cooked the sauce. Pour a can of whole tomatoes and carefully break up them up. Add some chopped garlic and let it simmer till thick. Lastly add a teaspoon of brown sugar and the dried herbs provence.
Gently deflat the pizza dough and cut into 2. Grease the pan with some olive oil and carefully stretch out the dough. If the dough spring back, leave it to rest for another 15 minutes. Prick the dough over with a fork and bake in pre-heated oven 220C for 10-15 minutes (depending on thickeness). Remove from oven and you can then arrange the topping.

well got to use the hand to distribute the cheese around the edges.
voila, dinner is ready in 5-10 minutes ...bon apppetit!

I am so sorry to hear about the sudden death. This is all about life's unexpected things that could happen to any of us. My classmate also passed away two weeks ago during his afternoon nap. At his funeral wake, I comforted his 2 school going sons that their father died very quickly and didn't suffer prolonged sickness. Perhaps he died peacefully during his nap but at young age. I also do not take my health for granted when I travelled. I would buy travel insurance and pray a lot for a safe trip.
