CHILDHOOD FAVOURITE

I call them Toasted Bread cups.. a childhood favourite with my kids.  This was the way to use up those leftover bread and create something tasty for them.  

Besides the bread, I use some frozen mixed veggies, diced onions and diced chicken fillets (these are the most tender parts of the chicken).  I am sorry that I don't have exact measurements ... just estimate enough for 6 pieces

Melt butter in wok

add diced onions and saute till fragrant and transparent.  Add the diced chicken (by the way if you can also pre-blanch the chicken). 

Add plain flour and stir to mix and cook flour slightly 

Add about 1 cup of fresh milk and stir till combine.

Add seasoning, salt, black pepper and some mixed herbs and its done.. we don't want to overcook the chicken otherwise it will be too tough.

While I was cooking the fillings, Sarah had prepared the bread cup... trim off the crust and lightly roll the bread to flatten. Make cuts at the corners and fit them into the muffin tin (greased if not using non-stick one).
Spoon the filling into each cup and top with grated cheese. 

Bake at pre-heated oven 180C for around 15-20 minutes till cheese melted and edges are lightly brown. 
  
Here's our Sunday dinner served with a cucumber/tomato salad and of course a bottle of chilled hoegaarden rosee ..yum seng!
