APPLE FRANGIPANE WITH PRETZEL CRUST

It was Raya long weekend holiday.

Pretzels and melted butter for the base. 
My sister has given me 2 bags of these mini pretzels cookies from her trip to Melbourne.  I came across a recipe using these to make a pie crust. (see Davidlebovitz blog) and so its time to bake a tart.

Ground almonds, flour, eggs, apples and of course, pure almond extract. 
I choose apples as there are readily available in my fridge (ps the doggies love the apples after their meals!) 

I processed the pretzels in the food processor, mix with mleted butter and press into the tart tin and into the oven to bake for around 15 minutes.  While the crust is baking in the oven, mix the ingredients for the frangipane batter and slice the apples. 

Once the crust has cooled, spread the batter evenly and decorate with the sliced apples. 

Voila..... lovely moist almond cake .

Once the doughnuts are cooled, it's time to coat them over with chocolate glaze. 

dipped in chocolate....yummy. 


Baked doughnuts have a cake-like texture but these are soft and moist.

Black Forest Cake.
I was asked whether I know how to bake a Black Forest Cake.  Now this cake which was very popular once a upon a time before the fondant decorating and  3-D effect cake-decorating overtook the market.  So I was very glad to have this opportunity to bake the cake again.   

This is what I delivered.... 2 dark fudgy chocolate cakes sandwich with whipped cream frosting with a whole can of pitted dark cherries.  Top with more whipped cream frosting and fresh cherries.  It was just the right time as fresh cherries are making an appearance during the summer months.  

2 types of cherries, the can pitted cherries with fresh cherries and of course a light brush with the cherry liquer 





I had an extra can of cherries and fresh cherries left, let's roll it up!

MAKING SUPER BOWLS/BENTO # 3

Baked Chicken Tenders, Spicy Baked Chickpeas, blanched asparagus, roasted beetroot and cherry tomatoes (eaten). 

10 grains rice with quinoa, grilled beetroots, fresh cucumber, grilled eggplants, roasted yellow and red peppers 

Boiled chickpeas, roasted potatoes, blanched longbeans, grated carrot and cranberries salad drizzle with olive oil and lemon juice, braised taufoo with bonita flakes.  


10 grains rice with quinoa, baby corn, long beans, beetroots and pumpkin.
